The Pho Bar

Once upon a time, during the 2012-13 school year, Johnson County Community College had a pho bar. Not only was I introduced to it during the production of this piece, I became a fast fan.
In this JCAV piece, reporter Leslye Moraes interviewed JCCC head chef Tim Johnson, who spearheaded the pho bar. As Chef Johnson talks the audience through the process, you can also see a number of video students - myself included - illustrating the process.
Pho, for the uninitiated, is a Vietnamese noodle soup made with rice noodles, meat (usually beef or chicken) and vegetables, usually in a beef-based broth. It's addictive. Sadly, Chef Johnson passed away shortly after this piece was finished, and the pho bar itself didn't last much longer. That said, I have found at least one local restaurant that serves a great tasting chicken-based pho.
